Shrimp Ceviche with Plantain Chips
Ingredients:
1 lb shrimp, peeled & deveined (small or medium)
½ cup lime juice (about 4–5 limes)
½ cup orange juice (about 1 orange)
1 small red onion, finely diced
1 jalapeño, finely diced (seeds removed if mild)
1 medium tomato, diced
½ cucumber, diced
¼ cup cilantro, chopped
Salt & pepper, to taste
1 bag plantain chips (store-bought or homemade)
Steps:
1. Peel and chop shrimp to whatever size you like or you can leave it whole.
2. Toss shrimp with lime & orange juice. Marinate 20–30 min.
3. Add onion, jalapeño, tomato, cucumber, cilantro. Season with salt & pepper.
4. Serve chilled with plantain chips.
