Thalassery style biryani is one of the popular and tastiest biryani. Melange of rice and loads of exotic spices that blend together to give that unforgettable taste..The style of preparation and the rice used to make this biryani gives a unique delicious taste…it’s special kind of rice called Jeerakasala/Jeeragasamba rice, but I made it with basmati rice . Lets start our preparation.
Ingredients :
For the Mutton Masala :
Mutton - 1/2 kg (Mutton may be substituted with chicken or beef)
Onions - 3 sliced
Green Chilies - 10 -15 (depends on spice level)
Ginger - 1 small piece
Garlic - 1 tbsp (crushed)
Red Chili Powder - 1 tsp
Turmeric Powder -1/4 tsp
Tomato -1 big (chopped)
Curd (beaten) -1/4 cup
Cloves - 2
Cinnamon -1 inch stick
Star anise - 1
Bay leaves - 1
Water - half cup
Ghee + Oil -2 tbsp
For Rice :
Jeerakasala Rice /Basmati Rice -2 cups
Water drained from the cooked mutton -1.5 cups
Water - 2 cups
Lemon juice
Cinnamon - 1 small stick
Cardamom - 2
Cloves - 2
Ghee - 2 tbsp
Oil - 2 tbsp
Salt to taste
To Garnish :
Cashew nuts - handful
Raisins - handful
Onion - 1 (very thinly sliced)
Rose essence - 1 tsp mixed in 1 tbsp water
Saffron -a pinch, mixed in 2 tbsp warm milk
Garam Masala - 1 tsp
Ghee - 1 tbsp
Coriander Leaves -handful (chopped)
Mint Leaves - handful

0:48 Grind coarsely
1:02 Chilli powder
1:07 Turmeric Powder
1:18 Cinnamon, cardamom, cloves, star anise
2:49 Sliced onions
4:01 Strain the water
4:17 Wash and drain 2 cups of rice
4:35 Cinnamon, clove, cardamom
5:30 Caramalize the onions
6:11 Saffron mixed with 2 tbsp of warm milk
6:19 Rose water mixed with 1 tbsp of water
6:43 Add in a layer of rice
6:52 Add in coriander and mint leaves
6:56 Fried onions, garam masala
7:01 Fried cashews,raisins
7:10 Saffron milk
7:16 Rose water mixed with water
7:35 Open the lid after 15 min
