CHICKEN SPAGHETTI IN MUSHROOM SAUCE

Easy chicken spaghetti in mushroom sauce recipe.
Servings: 3-4
Shopping List:
1 tbsp. butter or oil
1 1/2 cups fresh chicken breasts cut into about 1 inch chunks
1 tsp. minced garlic
Kosher salt and course black pepper to taste
1/4 tsp. dried Italian seasoning
1 10.5 ounce can of cream of mushroom soup
3/4 cup evaporated milk, half and half or heavy cream
About 1/4 cup of the cooked spaghetti water
8 ounces (1/2 box) thick spaghetti
Parsley for garnish
Directions:
Begin cooking the spaghetti per package instructions in moderately salted water. DO NOT DRAIN THE SPAGHETTI!
In a skillet over medium heat, add the butter and/or oil.
Add the cut chicken and cook through, about 8-10 minutes.
When the chicken is done add the garlic and saute about 45 seconds just until fragrant, taking care not to burn it.
Add the salt and pepper to taste. Toss.
Add the cream of mushroom soup then the cream. Stir until the soup is fully dissolved and creamy.
Add the Italian seasoning. Toss.
Tong in the cooked spaghetti and the 1/4 cup of pasta water into the chicken mixture. Toss well until really creamy.
Garnish with parsley and serve.
