This classic fruitcake is a welcome addition to any holiday table. Or, if you're like me, enjoy it with tea / coffee whenever you feel like it!
For longterm conservation drizzle it with brandy and wrap tight - this way it can be stored for weeks, if not months!

Ingredients
Approx 1½ cups / 200 g mix of dried fruit, candied fruit and nuts (raisins, dates, cranberries, walnuts…)
Up to 1 cup / 140 g glazed cherries
1 cup / 240 g sour cream (full fat)
1 teaspoon baking soda
2 large eggs
1 tsp rum extract or 1 tbsp brandy
½ cup / 110 g / 8 tbsp unsalted butter, softened
1 cup / 200g sugar
Zest of 1 orange
2⅓ cups / 300 g all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
Special equipment:
10 inch / 26 cm loaf pan, lined with parchment paper
Tips:
Place a separate pan of water in the oven for gentler baking. It might need to be replenished during the baking.
If the top of the fruitcake is getting too browned as it bakes, tent it with some foil.
