早前提過麩質敏感的朋友,其實是對穀物中的穀蛋白敏感,所以首要避免進食的食物,便是以麥所製作麵包及意粉,應該多吃水果和蔬菜,豆類,種子和堅果,碳水化合物可以選用純米所製成的米粉、藜麥、蕎麥等等。因亞洲人仕以米飯作主食所以頗適合麩質敏感的朋友,但要留意一些調味及配料有否含麩質的成份,例如豉油就必需選擇特別的不含麩質豉油,才不致敏感。

A gluten allergy is an allergy to the protein found in wheat, barley and rye. People who are allergic to gluten must therefore avoid bread and pasta made with wheat, and should eat more fruits, vegetables, legumes, seeds and nuts. For carbohydrates, they can choose rice noodles that are made purely with rice, quinoa, buckwheat or other gluten-free flours. In Asian cuisine, in general, rice is the main food, so it is suitable for people with gluten allergies, but make sure seasonings and other ingredients are gluten-free; for instance, choose a gluten-free soy sauce.
