Ingredients:
✅ 5 Eggplants
✅ 300g Lamb Meat
✅ 3 Onions
✅ 100g Rice
✅ 50g Lentils
✅ 100g Kashk (Fermented Whey)
✅ Fried Mint (Nana Dagh)
✅ Fried Garlic (Sir Dagh)
✅ Turmeric, Salt, Black Pepper
✅ Saffron, Walnuts
How to Make It:
1️⃣ Cook the Meat: Sauté sliced onions and meat in a pot until slightly golden. Add turmeric, black pepper, and water, then let it simmer until tender.
2️⃣ Soak the Lentils & Rice: In separate bowls, soak them for better texture.
3️⃣ Prepare the Eggplants: Peel, slice, and cook them on low heat until soft.
4️⃣ Cook the Lentils & Rice: Boil together until fully cooked.
5️⃣ Fry the Onions & Garlic: Sauté onions until golden, adding a pinch of turmeric for color. Fry garlic separately.
6️⃣ Mash Everything!:
🔹 Mash the cooked eggplants.
🔹 Add lentils, rice, and shredded meat, then mash again.
🔹 Mix in fried onions, fried garlic, kashk, and a pinch of salt, mashing until smooth.
7️⃣ Garnish & Serve: Top with fried onions, ground walnuts, fried mint, kashk, and saffron. Enjoy!
