Ingredients:
1 large head green cabbage (about 2.6 lb / 1.2 kg)
2 lbs. (900 g) Yukon Gold potatoes, cut into large pieces
5 tbsp. olive oil
1 tbsp. onion powder
1 tbsp. garlic powder
1 tbsp. paprika
½ tsp. red pepper flakes
1 tsp. salt
rosemary or other fresh herbs, to garnish
🥣 For the mushroom Sauce:
2 lbs. mushrooms crimini or baby bella
5 tbsp. olive oil
5 garlic cloves, minced
¼ tsp. red pepper flakes
½ tsp. salt
13.5 oz. coconut cream
2 tbsp. nutritional yeast
Instructions how to bake cabbage:
1. In a small dish, mix the melted butter with the spices (paprika, garlic powder, onion powder, salt, and red pepper flakes).
2. Pull and remove the outer leaves from the cabbage. Wash the cabbage and pat it dry. Carefully remove the core to expose and access the inner leaves.
3. Place the cabbage upside down on a large cast-iron skillet or a baking dish. Using a spoon, spread about three tablespoons of the spiced butter along the inside walls where the core used to be. It's okay if some dribbles out.
4. Arrange the potatoes around the cabbage and brush them with the spiced butter, reserving about 2 tablespoons of that butter for later.
5. Cover the whole skillet with aluminum foil, and bake at 400°F for 1 hour.
6. After the hour, remove the foil and flip the cabbage core-side down. Brush the cabbage with the remaining spiced butter. Return the skillet to the oven and bake for another 25 minutes, or until the cabbage has browned nicely and cooked through.
7. Garnish with fresh herbs, like rosemary sprigs, and serve.
Instructions how to make mushroom sauce:
1. Cut off the stems of the mushrooms and then dice them into ½-inch cubes.
2. In a large saucepan or pot, pour the oil and then saute the mushrooms over medium-high heat, stirring as they simmer. Cook until they have shrunk some and are a deep brown color.
3. Now add the minced garlic cloves, red pepper flakes, salt, and pepper, and stir well.
4. Then add in the coconut cream and nutritional yeast. Stir everything together until well-combined. Serve hot with your favorite dishes and sides.
