(or all purpose flour 320g)
30g sugar
4 instant yeast
Egg white*2 (or egg white 80g)
150g milk
3g salt
30g unsalted butter
filling:
80g softened unsalted butter
140g grated coconut
40g caster sugar
2 egg yolks
20g condensed milk
(can be replaced with honey, or milk)
surface:
80g mozzarella cheese (optional, if you don't have it, you can leave it out)

Baking temperature:
180°C/or 356°F
