In this video, I’m making Pain au Chocolat with a double roll, a technique I’m experimenting with that gives the pastries a beautifully unique look.
⚠️ Important note: during the lamination phase I made a mistake (the butter was too cold and broke), but I decided to continue the process anyway. I wanted to show you this side of the journey too. We learn by doing, and every mistake helps us improve.
📌 RECIPE (for 7–8 LARGE pieces):
500g medium-strong flour
20g fresh yeast
200g cold milk
100g cold water
60g honey
5g salt
Plus 2 chocolate sticks (100g each) to create the bars
