Rocket Salad with Pears - Mark's Cuisine #29

Today I am doing a really punchy flavoured Rocket salad with pears, pine nuts and parmesan cheese (optional).
A Green Salad Recipe with punchy flavors always goes well with a great pasta. This recipe is simple and versatile with contrasting flavors that are a delight!
Serves 4
Ingredients
100g / 3 1/2oz rocket lettuce
1 pear
40g / 1 1/2oz pine nuts
30g /1oz parmesan cheese (optional)
3 tbs olive oil
juice of 1/2 lemon or 1tbs of white wine vinegar or balsamic
1 small clove of garlic
Salt and pepper

Directions
To make the dressing for our Rocket salad we mix the juice of 1/2 a lemon with olive oil, crushed garlic, salt and pepper (to taste).
Next step in our Rocket salad is to roast the pine nuts in a pan on a low heat, stirring constantly for about 3 minutes or until golden, then let cool.
If you want parmesan cheese in your rocket salad, finely shave with a sharp knife in long strips. Peel and core pear and also slice in long strips.
The last step in our Rocket salad is to toss the dressing with the rocket and place the pears, pine nuts and cheese on top and serve immediately.
