Slow roasting is the key to an amazingly tender and flavorful sweet potato. Cooked with the skin on, the interior is so creamy that it melts in your mouth. This method retains all the nutrients and is so convenient to make.

Baked Sweet Potato – slow roasted
Prep: 10 minutes
Cook time: 2 ½ hrs
Serves: 2
Ingredients:
• 2 sweet potatoes
• Extra Virgin olive oil (enough to brush all around)
• Salt to taste
• Optional: butter, sour cream, chives – all as possible condiments
Process:
• Pre-heat your oven to 275 deg. F (135 C)
• Wash/scrub the potatoes clean, then dry them with a cloth
• Poke each sweet potato with a fork, once (to help prevent it from bursting)
• Brush extra virgin olive oil all around each potato and then add salt to taste, all around as well.
• Place parchment paper on a baking sheet. Place potatoes on parchment so that they do not touch
• Bake for 2 ½ hours
• Remove and serve – make one cut across the top of the potato and the skin will easily peel off. Enjoy them as is, or feel free to add butter, sour cream, and chives
