Hello everyone, Happy New years eve!I hope you all had a lovely Christmas break and some well-earned downtime. I'm back with another gluten free food ideas vlog, I absolutely love filming and editing this style of vlog so I hope you enjoy too. I'm going into the new year as a functional nutrition student and I am really excited to be able to bring a better understanding to those whole find nutrition overwhelming. Since being pregnant and having my own issues with Gluten/ nuts / inflammatory foods all I have wanted to do is dive deep into study and absorb as much information as I can , firstly to help myself and my family but also eventually others.

Breakfast :
Collagen rice pudding
Add a cupped handful of rice to a pan
Cover with milk - I use almond from Plenish
Add honey
vanilla essence
scoop of collagen
pinch of salt
let it come to a boil then simmer for 40 mins - Occasionally mixing so it doesn't stick to the pan . It should look thick and stodgy after 40 mins
I top it with frozen raspberrys, hemp seeds, pumpkin seeds, and goji berry

Lunch : 2 small garlic and herb chicken thighs, Old el paso gluten free wraps ( actually nice ) avocado, rocket , cucumber , spring onion and sweet chilli sauce.
Snack 2 : Add cashew milk to a pot , heat gently add 1/3 tsp Vanilla, ginger, 1/2 tsp cinnamon and 1/2 tsp turmeric - black pepper to activate the turmeric and honey for taste
Handful of grapes / fruit
Dinner :
My own version of a Cobb salad
Base Romane heart lettuce
Cucumber
Spring onions
Streaky Bacon
1 boiled egg
Chicken ( use your first to measure rough amount)
cupped hand amount of sweet potato
1/2 avo or a thumbprint size of cheese
Sweetcorn
You may add homemade gf croutons by shredding a dry panini and frying in oil and garlic until golden .
