We’re using pork leg steaks, but you can use any fatty or tough cut like pig’s head or pork shoulder. The key is in the authentic Jamaican jerk marinade — fresh herbs, pimento, scotch bonnet, citrus, and a splash of Red Stripe for that real yard-style flavor.
It’s a low-effort, high-flavor way to make jerk pork that simmers in a pot like a roast, using traditional seasonings with a twist. I’ll walk you through how to build flavor from the marinade all the way to the final garnish — and even break down how vendors adjust the spice level on the spot.

🥩 Pork + Seasoning:
~5 pounds pork leg steaks (or any fatty/tough pork cut like pig’s head)
1 tablespoon all-purpose seasoning per pound of pork
Jerk marinade (~1 to 1.5 tablespoons per pound of pork; recipe below)
🌿 Jerk Marinade:
1/4 cup pimento (allspice)
A generous handful of fresh thyme
2–3 inches fresh ginger
1 scotch bonnet pepper (go light or heavy depending on heat preference)
1 diced onion
2 1/2 heads of garlic (~about 12 cloves)
3 stalks escallion (green onion)
1/2 whole nutmeg, grated
A touch of cinnamon (optional, complements pork)
2 tablespoons brown sugar
1 tablespoon black pepper
1/2 tablespoon salt
1/4 cup soy sauce
2 tablespoons apple cider vinegar
1/4 cup neutral oil
2 tablespoons browning (preferably homemade)
1/4 cup Red Stripe beer (or any lager)
Juice of 1 orange
🧄 Pot Aromatics + Extras:
1 sliced onion
A few cloves chopped garlic
Splash of oil (for sautéing)
Extra Red Stripe beer (for cooking liquid — optional)
Fresh sliced onion (for garnish)
