• 1/2 cup oil

• 2/3 cup brown sugar

• 5 tbsp sour cream
• 1 tsp vanilla
• 1 1/4 cups finely shredded carrot (packed tight)
• 1/2 cup raisins
• 1/2 cup walnuts or pumpkin seeds
• 1 1/4 cups flour
• 1 tsp baking powder
• 1 tsp baking soda
• 1 tsp cinnamon
• 1/2 tsp ginger
• 1/4 tsp nutmeg
• 1/4 tsp ground clove
• 1/4 tsp + a pinch of salt
Crumble Topping
• 1 tbsp butter
• 2 1/2 tbsp cream cheese
• 1/4 cup brown sugar
• 1/4 cup rolled oats
