Garlic Stir-Fried Pak Choi
🍚 食材 Ingredients
小白菜 400g
Pak Choi 400g
大蒜 4 瓣
4 cloves garlic
干辣椒 1 个
1 dried chili
猪油 1 大勺
1 tbsp lard
盐 适量
Salt to taste
清水 2–3 汤匙
2–3 tbsp water
🍳 做法 Steps
小白菜洗净沥干,菜帮与菜叶分开。
Wash and drain the Pak Choi; separate stems and leaves.
锅热加猪油,小火融化,放入大蒜和干辣椒煸香。
Heat the wok, add lard on low heat; add garlic and dried chili to release aroma.
大火下菜帮,快速翻炒 30 秒。
Add the stems and stir-fry on high heat for 30 seconds.
一次泼水后,三次闷锅,每次 10 秒:
After adding water once, steam three times for 10 seconds each.
第一次:闷 10 秒,然后开盖翻炒。
First steam: cover 10 sec, then stir.
第二次:闷 10 秒,然后开盖翻炒。
Second steam: cover 10 sec, then stir.
第三次:闷 10 秒,然后开盖翻炒。
Third steam: cover 10 sec, then stir.
加入菜叶,大火快速翻炒 20–30 秒。
Add the leaves and stir-fry on high heat for 20–30 seconds.
加盐调味,大火翻炒几下即可出锅。
Season with salt, toss on high heat, and serve.
🥣 小技巧 Tips
三次 10 秒的短闷让菜帮更嫩更脆,不会出水。
The three short 10-second steams keep the stems tender and crisp.
菜叶只需要大火快炒,不要闷。
Leaves should only be stir-fried on high heat.
出锅前加几滴猪油更香。
A few drops of lard at the end enhance aroma.
