Spicy and Sour Shredded Potatoes

Potatoes 2
干辣椒 1 个
Dried chili 1
大蒜 3 瓣
Garlic 3 cloves

Green or red pepper strips a little
白醋 2 汤勺
White vinegar 2 tablespoons
盐 1/2 茶匙
Salt 1/2 teaspoon
花椒粉 1/4–1/2 茶匙
Sichuan pepper powder 1/4 to 1/2 teaspoon
食用油 1–2 汤勺
Cooking oil 1 to 2 tablespoons
做法
Directions
1.土豆切细丝,多次清洗,泡冷水 5–10 分钟,沥干。
Cut potatoes into thin strips, rinse several times, soak in cold water for 5–10 minutes and drain.
2.冷油下干辣椒和蒜末,小火慢慢炒出香味。
Start with cold oil, add dried chili and minced garlic, heat slowly on low heat to release aroma.
3.蒜末微黄时,转大火加入土豆丝快速翻炒。
When the garlic turns lightly golden, add shredded potatoes and stir fry on high heat.
4.沿锅边淋入白醋,继续翻炒。
Pour white vinegar along the edge of the wok and stir fry.
5.加盐和花椒粉,翻匀,关火出锅。
Add salt and Sichuan pepper powder, stir well, turn off heat and serve.
