Sweet Sugarless Story
As Kolkata enjoys one of the coldest winters in a long time, the most comforting thing in this weather is soup. And what better than making a soup with the fresh seasonal produce. Red carrots, peas, beans, cauliflower, broccoli are all in abundance in the market and thus we made my favorite Eight Treasure Soup. The name comes from the uniformly cut multi-colored vegetables adding a pop of color to the neutral/white base looking like jewels and thus called treasure.
I have used the veg stock in this soup (feel free to use chicken, fish or mutton stock) the veg stock recipe is there in the prawn ball soup video.
The ratio is simple for every Litre of stock we should have approx 1.5 cups of vegetables and 1 heaped tablespoon of jowar flour. I don't like my soup very thick you can adjust the quantity of slurry to your liking. Nonveg lovers can happily add some shredded / diced chicken or prawn as per their own choice.
