Pineapple cake recipe:
Serves: 1/2 kg
Ingredients:
For sponge cake:
1 cup Refined flour / Maida
1/2 cup Sugar
1/4 cup Refined oil
1/2 cup Milk
1 tsp Vinegar
1/2 tsp Baking soda
1/2 tsp Baking powder
1/2 tsp Pineapple essence / Vanilla essence
For pineapple glaze:
200g chopped Pineapple
2 cups Water
5 tbsp Sugar
2 tbsp Corn starch
1/2 tsp Yellow food color
For decoration:
1 cup Whipping cream
some cherries to decrate
*****Tips & tricks for making a perfect cake******
1. First of all Preheat the oven for at least 10 minutes. And keep all the ingredients ready. Also grease a cake tin and line with parchment paper or baking sheet in advance.
2. for making a good sponge, all the measurents should be corect, the batter should be lump free and flowy.
3. In the cake batter, I have used pineapple essence, you can also use vanilla essence
4. After baking, let the sponge cool completely. Its best to freeze it for 30 minutes before decorating. So when you are making layers the cake won’t crumble
5. The pineapple glaze can be stored for about a month in fridge. If it looks thick, just add some water and adjust the consistency.
6. When applying whipped cream on the cake, keep cleaning the knife or spatula after every application. this way the frosting will be smooth
7. Last but very important: After the cake is frosted, let it set in the fridge for at least 2 hours. Then the cake will taste amazing. I have kept the cake in fridge overnight. The next day the cake was so soft & all the flavours and cream was absorbed in.
