These lemon blueberry cheesecake bars are one of our absolute favorite desserts on the homestead — rich, tangy, crumbly, and surprisingly simple to make. Just a few ingredients, one mixing bowl, and a little time in the oven brings you a bar that tastes like summer in every bite.
In today’s video, I walk you through exactly how I make this easy 5-ingredient dessert using pantry staples and fresh (or frozen) blueberries. These are perfect for last-minute get-togethers, potlucks, or just having something sweet on hand — and every time I make them, they’re gone in a day.
💛 Lemon Blueberry Cheesecake Bars
Prep Time: 12 minutes | Bake Time: 35 minutes | Pan Size: 9x9
CRUST
1 cup all-purpose flour
½ cup sugar
1 stick (½ cup) melted butter
CREAM CHEESE LAYER
1 block cream cheese (8 oz)
¼ cup sugar
A splash of vanilla extract
Zest of 1 lemon
BLUEBERRY COMPOTE
1 container (about 1–1½ cups) blueberries
Juice of 1 lemon
📝 Steps:
Combine crust ingredients in a bowl until a crumbly dough forms.
In a separate bowl, mix cream cheese, sugar, vanilla, and lemon zest with a fork until smooth.
On the stove, simmer blueberries and lemon juice until thickened into a compote.
In a greased 9x9 pan, press half he crust mixture firmly to form a base.
Spread cream cheese layer over the crust.
Spoon the blueberry compote on top.
Finish with a sprinkle of the leftover crust mixture as crumble topping.
Bake at 350°F for 35 minutes. Let cool before slicing and serving.
