• 3 large eggs
• ¾ cup flour (can use rice flour, oat flour, or all-purpose) (100 g)
• 1 tsp baking powder (optional, makes pancakes fluffier)
• ½ tsp vanilla extract or your favorite flavoring (optional)
Instructions:
1. Mash the ripe banana until smooth.
2. Add yogurt and eggs, mix until combined.
3. Sift in the flour and baking powder (if using).
4. Add vanilla extract or flavoring of choice.
5. Mix until just combined (don’t overmix).
6. Cook spoonfuls of batter on a nonstick pan over medium-low heat until golden on both sides.
