Following the pastry stout trend, I decided to brew a Chocolate and Banana Milk Stout.
Recipe:
Mash -
5kg Crisp pale ale
1kg Weyermann Caraaroma
500g Warminster Flaked malted oats
350g Crisp Low colour chocolate malt
2 ripe, chopped bananas
Boil -
25g Bullion 7.2% @ 60 mins
25g Bullion 7.2% @ 10 mins
250g Lactose @ 10 mins
Fermentation -
FM41 Cloves and Bananas
100g Cocao nibs
200g Ripe bananas
Ferment for 14 days at 23C
