Yolanda raves, “The dish looks like a lot, but our breakfast in Costa Rica is amazing! Gallopinto (Mixed rice and beans) and you can add whatever you want, eggs, fried plantains, avocado”.

Gallopinto is more than just a breakfast item, it's the national dish of Costa Rica and Panama, and is also commonly savored in Nicaragua. The name Gallopinto translates to "spotted rooster" in Spanish, which could be a playful nod to the speckled appearance of black beans against the white rice.
