Who doesn't love a brownie? But this version has a twist as we decided to try a sweet potato brownie being intrigued as to how it would work. It was easy to make with just a few ingredients but the mixture seemed a bit dense, not like any other brownie mix. We were a bit concerned. Coming out of the oven again the texture was unlike any other but the smell was spot on. Then we tested it and were a bit wary, would it taste nice or be a disaster. You will have to try it for yourself!

1 medium sweet potato (about 250g cooked and peeled)
100g dark chocolate (at least 70% cocoa)
2 tablespoons cocoa powder
100g ground almonds
3 tablespoons honey
2 tablespoons coconut oil, melted
1 teaspoon vanilla extract
1/2 teaspoon baking powder
Pinch of salt
a handful roughly chopped pecan nuts
