i love anything rolo, like my lovely Labrador Rolo Sweet!
I share with you my top tips that i learnt in the trade when i was head Pastry Chef for a Michelin restaurant/ hotel for many many years.

Ingredients
Base
400g digestives
110g melted butter
Filling
600g full fat cream cheese
120g icing sugar
180g Caramel
360g double cream
275g (and more if you are like me!) rolos
200g caramel for the middle
Vanilla extract
250g double cream for piping
Rolos to garnish
Grated chocolate to finish
