Triple Chocolate Cake
1 - 2 layer Chocolate Cake Mix with pudding in the Mix
1 - 3.9 oz. pkg. Instant Chocolate Pudding mix
1 3/4 C. Milk
2 Eggs
12 oz. Baker’s Chocolate Baking Chips (I couldn’t find Baker’s, I used Nestle’s Semisweet Chocolate Chunks)
Preheat oven to 350*.
Combine all ingredients in a large bowl. Mix by hand until well blended, about 2 minutes. Pour into a 10 inch tube or fluted tube pan that has been greased and floured. (I made mine into cupcakes).
Bake for 50 to 55 minutes or until cake springs back when touched. (I baked mine about 18 minutes).
Cool 15 minutes. Remove from pan. Finish cooling on a rack. Sprinkle with Powdered Sugar.
Luscious Frosting
2/3 C. Granulated Sugar
1/3 C. Water
2 Egg Whites
1 t. Vanilla
1 C. Powdered Sugar
Boil the Granulated Sugar and Water until it spins a short thread, 230* F.
In the meantime, beat the Egg Whites until frothy, add 1/3 C. Powdered Sugar and beat to the meringue stage. Pour the sugar syrup over this, beating continuously. Beat in remaining Powdered Sugar. Add Vanilla. Allow to cool.
Spread on cake.
