Note: Under normal growing conditions when the squash flesh is relatively dry, the water boils off during cooking. Adding a small amount of water keeps the squash from burning where it is in contact with the pan. For the first time ever this year after record precipitation, I had some squash give off so much excess water that the pan ran over.
If your squash/pumpkin is dry, add a little water. If your squash/pumpkin is moist, you can probably skip the water.
