You guys asked for it, so here it is. Red Sauce Master Gravy, a recipe very often requested by viewers, but seldom revealed by chefs, but in this video Head Chef Sharma (at Richmond Spice" Indian Restaurant) kindly shows us his full recipe making process for making Red Sauce Master Gravy.
RED TOMATO SAUCE (MASTER BASE GRAVY) RECIPE INGREDIENTS:
Oil
Garlic & Ginger Paste
Turmeric Powder
Tinned Tomatoes (or Boiled & peeled fresh Tomatoes)
Water
Kasoori Methi
Salt
Sugar
Red Capsicum Pepper
Fresh Green Coriander Stems
Red Chilli Powder
Once the above is cooked, it is blended into a smooth puree.
PANEER TIKKA MASALA RECIPE INGREDIENTS:
Paneer, Onion and cooked in Tandoor Oven (marinated with Yoghurt, Mustard Oil, Garam Masala, Cumin, Coriander, Kashmiri Chilli Powder)
Oil
Garlic
Red Gravy
Cashew Nut Powder
Kasoori Methi
Mace, Black Pepper and Green Cardamom spice blend
Butter
Cream
Fresh Green Coriander
CHANA MASALA RECIPE INGREDIENTS:
Oil
Garlic
Red Gravy Sauce
Bhuna Sauce
Yellow Gravy
Boiled Chickpeas
Water
Chana Masala
Chickpeas
Kasoori Methi
Garam Masala
Green Coriander
VEGETABLE MAKHANWALA RECIPE INGREDIENTS:
Oil
Garlic
Red Gravy Sauce
Butter
Kasoori Methi
Mace, Black Pepper and Green Cardamom spice blend
Cashew Nut Powder
Mix Veg (Cauliflower, Carrot, Green Beans, Peas)
Cream
Butter
As the mixture stars boiling in the pan it will increase in volume, so be sure to use a large enough cooking pot to prevent it spilling out.
Please note that the above gravy is a tomato based gravy (which by itself is quite tangy) in the restaurant it's used alongside a Bhuna Gravy (Onion Masala) and a Yellow Gravy.
After making the Red Gravy (which is vegan), Chef Sharma shares his recipes for making Paneer Tikka Masala, Chana Masala (Chickpea curry), Vegetable Makhanwala all using the Red Gravy Sauce.
