Ingredients
For Chicken Seekh Kebab:
Boneless chicken – 1 kg
Salt – 1 tsp
Crushed ginger-garlic – 2 tbsp
Chopped green chillies – 1 tbsp
Chopped fresh coriander – ½ cup
Chopped mint (pudina) – ½ cup
Red chilli powder – 1 tsp
Turmeric powder – ½ tsp
Black salt – ½ tsp
Garam masala – ½ tsp
Tikka masala – 1 tbsp
Roasted cumin (jeera) powder – 1 tsp
Red chilli flakes – 1 tsp
Coriander powder – ½ tsp
Crushed coriander seeds – ½ tsp
Lemon juice – 1 tbsp
Roasted besan (gram flour) – 1 cup
Butter – 2 tbsp
Coal – 1 piece (for smoke)
Ghee – Few drops (for smoke)
For Red Chutney:
Dried red chillies (soaked) – 10
Green chillies – 2
Garlic cloves – 3
Black salt – ½ tsp
Cumin (jeera) – ½ tsp
Salt – ½ tsp
Tamarind (imli) water – ½ cup
Water – Few drops (to grind )
For Green Chutney:
Fresh coriander leaves – 1 cup
Green chillies – 2
Garlic cloves – 3
Pudina leaves – 3–4
Salt – ½ tbsp
Lemon juice – 1 tbsp
Water – Few drops (to grind)
For Onion Salad:
Onion (cut into rings) – 1 large
Lemon juice – 1 tbsp
Red chilli powder – A pinch
Chopped coriander – 1 tbsp
For Assembling:
Parathas – As needed (1 per roll)
Prepared Chicken Seekh Kebabs
Green chutney
Red chutney
Onion salad
Oil – As needed (for frying)
Instructions
Step 1: Prepare Chicken Seekh Kebab Mixture
1. In a large bowl, add boneless chicken, salt, crushed ginger-garlic, green chillies, coriander, mint, red chilli powder, turmeric, black salt, garam masala, tikka masala, jeera powder, red chilli flakes, coriander powder, crushed coriander, lemon juice, and roasted besan.
2. Mix everything very well.
3. Cover and set aside for 1 hour.
4. After 1 hour, grind the mixture until smooth.
5. Add butter and knead the mixture for 3–4 minutes until smooth and soft.
6. Place a piece of hot coal in a small bowl inside the mixture, pour ghee over it, cover the lid, and let it smoke for a few minutes to infuse flavour.
Step 2: Prepare the Chutneys
Red Chutney:
1. In a grinder, add soaked red chillies, green chillies, garlic, black salt, cumin, regular salt, and tamarind water.
2. Add a few drops of water and grind until smooth.
Green Chutney:
1. In a grinder, add coriander, green chillies, garlic, mint leaves, salt, and lemon juice.
2. Add a few drops of water and grind until you get a smooth paste.
Step 3: Prepare Onion Salad
1. In a bowl, add onion rings.
2. Add lemon juice, red chilli powder, and chopped coriander.
3. Mix well and keep aside.
Step 4: Shape and Cook the Kebabs
1. Wet your hands with water and shape the kebab mixture into seekh kebabs.
2. Shallow fry them on medium flame, rotating to cook evenly on all sides.
3. Once cooked, brush with ghee and lightly fry again for extra flavour.
Step 5: Assemble the Paratha Roll
1. Place one paratha on a plate.
2. Spread some red chutney and green chutney.
3. Add a layer of onion salad.
4. Place the chicken seekh kebabs on top.
5. Roll the paratha tightly.
6. Serve hot with extra chutney on the side.
