When I was young, my family used to often go to a local pancake restaurant in Manila. My go-to pancakes then were chocolate chip pancakes topped with whipped butter, peanut butter and maple syrup. They are truly decadent! Now that I’m older, I find myself enjoying pancakes with fresh berries. Sometimes I even add bacon and maple syrup on the side!

This recipe for fluffy pancakes recipe uses boxed pancake mix. You don’t have to worry about measuring a multitude of dry ingredients. You just have to focus on making the pancakes fluffy!

Fluffy Pancakes Recipe - Boxed Pancake Mix Hack

Ingredients

1 egg yolk
1 tsp sugar
1/2 cup milk
1 tbsp vegetable oil
1 tsp vanilla extract
1 cup pancake mix
Pinch of cream of tartar
3 egg whites
3 tbsp sugar
1 tbsp vegetable oil
1 tbsp water for steaming
Mixed berries, powdered sugar and maple syrup, to garnish

Directions

1. Prepare your toppings. If using mixed berries, wash thoroughly and slice if needed.
2. Beat the egg yolk together with the sugar. Add the milk, vegetable oil and vanilla extract, mixing in between each addition. Stir in the pancake mix until combined into a batter with thick consistency.
3. Add cream of tartar into the egg whites. Using a hand mixer, beat in low speed until the egg whites gets foamy. Add the sugar in increments, beating on high after each addition. Beat until stiff peaks in the meringue are formed.
4. Fold into the batter the beaten egg whites in three increments until just combined. Do not overmix.
5. Heat on medium a pan or griddle. Coat with vegetable oil using a paper towel or brush.
6. When the pan is ready, scoop batter into the pan. Add some water on the sides of the pan (not directly on the batter). Cover the pan and let the pancakes cook on one side. If you want thicker pancakes, top up each pancake with more batter. Cook until the sides of the pancakes are lightly browned and little bubbles have formed on the surface of the pancakes. Flip the pancakes and let the other side cook.
7. Serve warm with your chosen toppings.

Tips

You may use your favorite pancake mix but be sure to use one that still requires eggs, vegetable oil and milk. Do not use the pancake mixes labelled as “Complete” or those that you just need to add water. Those mixes have additives that takes the place of eggs, vegetable oil and milk.
