Recipes:
Broccoli Cheddar Stuffed Baked Potato
Potatoes: Use Red potatoes, Russet potatoes, Sweet potatoes, or anything you like. Season well with oil and salt and seasonings: I like to use paprika, ancho chili powder, onion powder, and Italian seasonings on red potatoes.
Bake at 450 degrees Fahrenheit
Broccoli "Cheddar" Sauce
1 medium head of cauliflower
1-2 medium-sized broccoli
1/2 onion (optional)
Chop your cauliflower into small 1-inch pieces and boil in salted water until tender.
Once tender, get rid of most of your water, and leave about 1 to 1 1/2 cups of water in the cauliflower. Season with onion powder, garlic powder, salt, and nutritional yeast (optional for cheesy flavor). Using a hand blender, blend until smooth.
In a separate skillet or pot, sauté your onion in grapeseed oil, add chopped-up broccoli, and season with salt, onion powder, ancho chili powder, smoked paprika, and garlic (optional)
Add 1/2 cup of water to assist in cooking until tender
Once tender, use a potato masher and mash the broccoli until the desired broccoli size. We like to mash it quite small.
Mix your broccoli with cauliflower and top roasted/baked potatoes
Chickpea Fritters:
Soak chickpeas overnight (we soaked approx. 2 cups dried, and ended up with about 4-5 cups soaked chickpeas)
On the day after, drain and rinse chickpeas
Add chickpeas into a strong blender such as a Blendtec
Season chickpeas with 2 tsp sesame oil, salt to taste, onion powder, and smoked paprika. Add water 80% of the way of chickpeas in the blender
Blend until smooth
Add chopped onions/spring onions, zucchini, any vegetable you'd like
Fry in grapeseed oil in a cast iron skillet until golden brown
Serve by itself, in a wrap, or as a burger!
Quinoa Fried Rice
Soak 2 cups of quinoa overnight
Chop up onion, carrot, zucchini, ginger and set aside
In a large pot, sauté chopped vegetables in grapeseed oil along with about 1 to 2 tsp sesame oil
Once aromatic, add your quinoa and toast. Season with salt, add any vegetables you'd like. We went for finely chopped Swiss chard.
Add coconut aminos if you have and garlic
Add about 2 cups of water, give it a mix, bring it up to a boil, cover, and cook on low or off for approximately 20 mins.
Once done, quinoa should be nice and fluffy!
Stir Fried Vegetables
Use whatever you have in the fridge!
Chop 1 onion, 1 thumb of ginger, a small beet, 1 large tomato, 2 heads of broccolini, 1 broccoli floret
Sautee onions, ginger, and garlic (optional) in grapeseed oil add 1 to 2 tsp sesame oil, and stir fry until nice and aromatic
Add your vegetables and mix well
Season to taste with salt and coconut aminos if you have
Add 1 cup of water, you can cover and cook for about 10 mins until vegetables are tender.
Serve over brown rice, add an extra drizzle of sesame oil and top with kimchi. Enjoy!
