This is a very different menudo from what most Filipinos would normally call a menudo. My rendition of menudo comes from our town in Pampanga, Philippines. It uses ox tail to give wonderful, rich, flavors, with spices and chorizo that really highlights the Spanish Colonial flare of my hometown.
