洋蔥絲建議先浸泡於冰水中30分鐘,以減少辛嗆味。
肉片於小火熱水中汆燙至熟後,建議立即撈起瀝乾,並浸泡於冰水中,使口感更軟嫩Q彈。

食材
五花肉薄片-200g、洋蔥絲-70g、小黃瓜絲70g、香菜葉-5g、花生米-2湯匙
醬汁
蒜末-5小瓣、辣椒末5g、魚露-2湯匙、檸檬汁-2湯匙、白砂糖-1茶匙、飲用水-2湯匙
步驟
(1) 將洋蔥絲浸泡於冰水中30分鐘備用。將所述醬汁於小碗中混合備用。
(2) 小火煮滾一鍋熱水,放入肉片汆燙至熟,撈起瀝乾,再放置冰飲用水中冷卻。
(3) 準備一個攪拌盆,放入肉片、洋蔥絲及小黃瓜絲,再倒入醬汁拌勻。
(4) 將涼拌豬肉沙拉盛盤,表面擺放香菜葉,再撒上花生米即可。

Ingredients
200g thinly sliced pork belly, 70g sliced onion, 70g Japanese cucumber(cut into thin strips)、5g coriander leaves、2 Tbsp roasted peanuts
Sauce
5 minced garlic, 5g minced chili pepper, 2 Tbsp fish sauce, 2 Tbsp lemon juice, 1 tsp granulated sugar, 2 Tbsp water
Instructions
(1) Soak the sliced onion in cold water for 30 minutes. Combine the sauce in a small bowl, set aside.
(2) Boil a pot of water over low heat, add the sliced pork and cook until cooked through, then transfer the sliced pork to the cold water.
(3) Add sliced pork, onion and Japanese cucumber in a mixing bowl, pour the sauce and stir well.
(4) Plate the spicy pork salad, top with coriander leaves and roasted peanuts.
