Today I’m sharing a soft and easy coconut scones recipe made with Inkomazi.
This recipe uses cups only, has no eggs, and is perfect for beginners. The scones come out fluffy, lightly sweet, and perfect with tea or coffee.

🥥 Ingredients
• 7 cups cake flour
• 1 cup sugar
• 9 teaspoons baking powder
• 1/2 teaspoons bicarbonate of soda
• pinch of salt
• 40g desiccated coconut
• 400g butter or margarine (cold and grated)
• 2–2½ cups Inkomazi
• 1 teaspoon vanilla essence/ caramel essence (optional)

👩🍳 Method
1. Preheat oven to 180°C and grease or line a baking tray.
2. In a large bowl, mix the cake flour, sugar, baking powder, salt, and coconut.
3. Add the cold grated butter and lightly rub it into the dry ingredients until the mixture looks like breadcrumbs.
4. Gradually add Inkomazi, mixing gently until a soft dough forms.
5. Turn the dough onto a lightly floured surface and pat gently (do not knead).
6. Cut into scones and place on the prepared baking tray.
7. Brush the tops with a little Inkomazi.
8. Bake for 15–20 minutes or until lightly golden on top.
