:- ingredients.
Aloo vankaya curry.
8" brinjal.
2" potatoes.
Add the 2 Tbls of salt in a water bowl.
Cutting brinjal.
Transfer the brinjal in a salt water.
Peel skin potatoes.
Cutting.
Transfer the chopped potatoes in a salt water.
Keep it a side.
Pan on stove.
Add the 2 Tbls of oil.
1" Tbls ' of cumin seeds.
3" green chillies.
Roast.
2" chopped onions.
Roast.
Curry leaves.
Roast well.
1' Tbls ' of ginger garlic paste.
Saute for 2-3" minutes.
Add the chopped potatoes.
Roast well.
Add the chopped brinjal.
1/2" Tbls ' turmeric powder.
1" Tbls ' of salt.
Mix well.
Add the 3" chopped tomatoes.
Mix well.
Saute for 4-6" minutes.
Add the 2 Tbls of red chilli powder.
1" Tbls ' of coriander powder.
Saute for 2-3" minutes.
Add the 1" glass of water.
Add the salt to taste.
Mix well.
Cook for 4-6" minutes.
1/2" Tbls ' garam masala.
Mix well.
Cook for 2 more minutes.
Add the coriander leaves.
Mix well.
Aloo vankaya curry is a ready.
