The best salmai I've ever had! Recipe is a combination of several from Eric @2guysandacooler .
Per 1000g:
25g salt
2.5g cure #2
2g dextrose
3g white pepper
1g garlic powder
3.3g fennel pollen
2g calabrian pepper flakes
3g fennel seed
7g Hungarian hot paprika
20g non-fat milk powder
Flavor of Italy Starter Culture, 1/4 tsp starter in 1/4 cup distilled water, let rest for 30 mins
