French Onion Ground Beef and Rice Casserole
• 1 lb ground beef
• 1 medium onion sliced
• ½ cup sliced bell peppers
• 2 tsp minced garlic
• 1 Tbsp olive oil
• 1 cup long-grain white rice (uncooked)
• 2 cups beef broth
• 1 can (10.5 oz) French onion soup
• 1 cup sour cream
• 1 cup shredded mozzarella cheese
• 1 cup shredded cheddar cheese
• 1/2 cup crispy fried onions
• salt and pepper to taste
In a large skillet, caramelize the onions and then add the peppers
Brown the ground beef over medium heat. Drain excess fat
Add the garlic and saute for 1 minute
Salt and pepper to taste
◦ In the same skillet, add rice, beef broth, and French onion soup. Bring to a boil, then reduce to low heat and simmer for 15 minutes, stirring occasionally.
◦ Preheat oven to 375°F
◦ Stir sour cream and some of the Mozzarella cheese into the rice mixture.
◦ Transfer the mixture to a greased 9×13-inch casserole dish. Sprinkle mozzarella and cheddar cheese evenly over the top.
◦ Bake uncovered for 20 minutes.
◦ Remove casserole from the oven, sprinkle with crispy fried onions, and bake for an additional 5 minutes until golden and bubbly.
◦ Let the casserole cool for 5 to 15 minutes before serving. Enjoy the creamy, cheesy, and savory goodness!
