This is the most Delicious Cajun Shrimp with Bell Peppers and Corn. @CreateWithDarrion-kp3it
INGREDIENTS
2 tablespoons extra-virgin olive oil, divided
1/2 onion, chopped (about 1 cup)
2 - 3 cloves garlic, minced
2 bell peppers, chopped
2/3 cup corn (frozen and defrosted or canned)
1 1/2 lb. shrimp, peeled and deveined
2 teaspoons Cajun seasoning
Salt
Ground black pepper
1 Tablespoon lemon juice
1 Tablespoon freshly chopped parsley
DIRECTIONS
In a large pot, heat 1 tablespoon olive oil over medium heat.
Add bell peppers and corn and sauté until tender, about 2-5 minutes.
Stir in onion and garlic and cook for 1 minute more.
Transfer vegetables to a bow and set aside.
Add he remaining 1 tablespoon olive oil to pot and heat on medium heat.
Add shrimp in a single layer and season with Cajun seasoning (and salt and pepper to taste).
Cook until pink, about 1 to 2 minutes on each side.
Add vegetables and lemon juice and toss until combined.
Garnish with parsley before serving. Enjoy!!!!
