My Garlic Roasted Shrimp and Potatoes is a super easy sheet pan dinner for a busy weeknight. @CreateWithDarrion-kp3it #shrimp #potatoes
INGREDIENTS
2-3 potatoes chopped (peel on)
1 small onion or 1/2 large onion peeled and sliced
3 tablespoon olive oil (2 tablespoon for potatoes and reserve 1 tablespoon for shrimp and peppers)
2 teaspoon garlic powder dried ground
2 teaspoon paprika dried ground
2 teaspoon cumin dried ground (optional)
all purpose seasoning or salt and pepper to taste
1 small bell pepper or 1/2 large bell peppers chopped
12 shrimp x-large peeled, deveined (tail on or tail off)
INSTRUCTIONS
Preheat oven to 425 degrees F (218 degrees C)
Chop potatoes into sections. Try to keep them all the same size so they cook evenly. Dry very well with a paper towel (very important step)
In a large bowl, add chopped potatoes, olive oil, mixed seasoning and toss well.
Place seasoned potatoes and onion on a lined sheet pan in a single layer. Make sure there is no overlapping of potatoes.
Bake potatoes and onions for 20 minutes and then toss. Place back in the oven to continue baking.
In the meantime, prepare the shrimp and the bell peppers.
Toss your shrimp and bell peppers with olive oil and mixed seasoning.
Add your seasoned shrimp and bell pepper mixture to the roasted potatoes, toss and spread out in an even layer to continue roasting for 6-8 minutes or until the shrimp are no longer translucent.
Test to make sure your potatoes are fork tender and your shrimp are no longer translucent. Your shrimp should be nice and pink.
Remove from the oven.
