Classic Vanilla Cake with Buttercream Icing 100th Video!

Classic Vanilla Cake (Structurally Sound)
Ingredients
1/2 c (1 stick) butter
2 3/4 c flour
1 t baking powder
1 t salt
2 c sugar
1/2 c vegetable oil
5 large eggs
1 T vanilla extract
1 c milk
Preheat oven to 350 F
1. Butter the bottoms and sides of two 9 inch round cake pans. Dust the insides with flour, then dump out the excess flour.
(Optional, cutout a piece of parchment to line the bottom of the pan. Butter just the sides. No flour needed if using parchment)
2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside
3, Using a hand mixer or stand mixer, beat the butter, sugar and oil in a large bowl on medium high speed until fluffy and lighter in color.
4. Beat in the eggs one at a time.
5. Add the vanilla, beat until combined.
6. Remove from mixer. Then using a spatula, fold in 1/3 of the flour mixture, then 1/2 of the milk. Repeat another time then finish with the last third of the flour.
7. Divide the batter evenly into the two prepared cake pans.
8. Bake at 350 F for 25-35 minutes. Cakes will look golden brown on top and a toothpick placed in the center will come out clean.
9. Allow to cool (1-3 minutes) until the sides pull away from the pan, then carefully turn onto a cooling rack.
10. Allow to cool completely.
11. Frost with any frosting.
Classic Vanilla Buttercream Frosting
Ingredients
1 1/2 c (3 sticks) butter
pinch of salt
3 1/4 c confectioners sugar
2 t vanilla extract
1/4 c milk
1. Beat the butter and salt in the bowl of a stand mixer until smooth and fluffy.
2. Gradually beat in the confectioners sugar.
3. Once all the sugar has been added, increase the speed to medium high for several minutes until light and fluffy.
4, Reduce to medium speed and add the vanilla.
5. Beat in the milk 1 tablespoon at a time.
6. Frosting should be spreadable and smooth. If too stiff, add milk 1 t at a time. If too runny add confectioners sugar 1 T at a time.
7. Make sure cake is completely cooled before spreading the frosting.
