Ingredients:
• Chicken thighs (quantity is up to you)
• Heath Riles BBQ Buffalo Seasoning
• Extra-virgin olive oil
• 1 batch of Bobby T’s Perfect Pizza Dough, proofed
• BBQ Bob’s Mighty Mitch’s Wing Sauce
• Shredded mozzarella cheese
• Sliced red onion
• Blue cheese crumbles
• BBQ Bob’s Bobby T’s Pizza Seasoning
Directions:
1. Remove the chicken thighs from their packaging and trim off any excess fat. Set the chicken in a large bowl, season it with Heath Riles BBQ Buffalo Seasoning, and drizzle it with olive oil. Mix well, cover, and let marinate in the fridge for at least 2 hours.
2. Fire up the Traeger Flatrock Flat Top Grill and let it come to temperature before adding some olive oil. Cook the chicken for 6 minutes, flipping halfway through. It should reach an internal temperature of 165℉.
3. Take the meat off the grill, let it rest for 15 minutes, and then dice it into small pieces.
4. Lay the proofed pizza dough on a clean workspace and cover on both sides with flour. Use your hands to form it into a pizza shape.
5. Lay the formed crust directly on the Traeger Flatrock Flat Top Grill set over medium-high heat. Cook until the dough shows bubbles, then flip it like a pancake.
6. Turn the grill off and move the Buffalo Chicken Pizza to the “cool” side of the pit. Add a drizzle of BBQ Bob’s Mighty Mitch’s Wing Sauce to the crust as your base. Then top with the Buffalo chicken, mozzarella cheese shreds, sliced red onion, and more Buffalo chicken.
7. Shut the grill lid and cook the pizza until the toppings are melted and the bottom of the crust is brown, about 20 minutes. You may need to move the Buffalo Chicken Pizza to the hot side of the grill. Remove from heat and top the pizza with a little more BBQ Bob’s Mighty Mitch’s Wing Sauce and a sprinkle of BBQ Bob’s Bobby T’s Pizza Seasoning.
