MACARON RECIPE
130 to 140 grams egg white. approximately 4 eggs.
pinch salt
90 grams caster sugar
230 grams icing sugar
115 grams almond meal
teal Americolour Soft Gel Food Coloue
Edible gold dust
edible small white beads to decorate
white chocolate, to decorate

1. whisk egg whites and pinch of salt on high speed.
2. When egg whites begin to foam, gradually add in caster sugar. Whisk on high until stiff peaks form.
3. Sift in icing sugar and almond mean and fold batter gently for a few minutes until reduced to ribbons that fade after about 30 seconds.
4. Pipe circles onto tray lined with baking paper about 3.5cm in diameter.
5. Place in oven with light and fan on for approximately 30 minutes to an hour. This allows a dry shell to form over the cookie
6. remove macarons from the oven and preheat the over to 130 degrees Celsius with fan on. Once ready, bake macarons for 8 minutes. Rotate the tray for even cooking and even colouring, and bake for another 8 minutes.
7. Fill and decorate
WHITE CHOCOLATE GANACHE RECIPE
210 grams white chocolate
70 grams heavy whipping cream
coat the chocolate in the cream using a bowl and microwave for 30 seconds. Mix after 30 seconds, and if the chocolate has not completely melted, add in the microwave for 15 seconds and stir until the chocolate has melted.
aaand that's how it's done! Thank you guys for tuning into this tutorial ! These really do look much nicer in person. As you can see, macarons do take a little bit of practice to perfect. the previous macaron recipe video I created had little peaks on them, meaning the batter wasn't worked quite enough to create a flawless surface on the cookie, and in this tutorial, I over beat by by what I believe is literally 3 or so fold too many which caused some bubbles to appear. However, this literally only affects the look of the cookie, it will still taste amazing with a crunchy shell and chewy soft centre, so the recipe is still a fantastic one. Moral of the story, NEVER GIVE UP!
