Authentic Afghani Pulao
Ingredients
2 kg meat (lamb)
3 cups rice
1 tbsp salt
1 tbsp pepper
8/9 cloves garlic
2/3 cloves
2/3 cinnamon
4/5 pepper corns
3 medium onions sliced
2 tbsp sugar
3 medium carrots (sliced)
Process
Boil meat in 6 cups of water, add the salt, black pepper and cloves of garlic.
Boil till it’s tender
Seperately brown the onions till they are quite dark.
Then caramelise the sugar
Add both to the meat cooked meat broth.
Pro Tip: Ensure the cups of water is double to the cups of rice after meat is cooked. Measure the water. It has to be 6 cups of water to 3 cups of rice.
Add the cloves, cinnamon and pepper corns to the broth and bring to a boil.
Add soaked rice (3 cups)
Boil the rice and put on damm for 20 mins (seal the lid of the pot with a cloth).
Separately slice carrots and sauté and when you’re serving the rice, garnish and serve.
