Ingredients:
Tamarind (seedless) – 1 cup (tight packed)
Jaggery – ¾ to 1 cup (grated)
Black salt – ½ tsp
Rock salt – ¼ tsp
Roasted cumin powder – 1 tsp
Red chili powder – ¼ tsp (optional but authentic!)
Chaat masala – ½ tsp (optional, for extra zing)
Wooden toothpicks / ice cream sticks – for serving
Powdered sugar or cornstarch – for dusting
👩🍳 Method:
Soak & Prep Tamarind:
Soak tamarind in warm water for 15–20 minutes.
Mash and strain to remove seeds and fibers. You want a thick, sticky pulp.
Cook the Candy Base:
In a nonstick pan, add tamarind pulp and jaggery.
Cook on low flame, stirring often. It will start thickening and leaving the sides (like soft dough).
This takes around 10–12 minutes.
Flavor It:
Add black salt, rock salt, cumin powder, chili powder, and chaat masala (if using).
Mix well and cook for another 1–2 minutes. Turn off heat and let it cool slightly.
Shape the Lollipops:
Once it’s cool enough to handle (but still warm and pliable), grease your palms.
Take small portions, roll into balls or discs.
Insert a toothpick or mini stick in the center of each.
Optional: Dust with a mix of powdered sugar + black salt to prevent sticking.
Let It Set:
Place them on a greased plate or parchment paper.
Let them cool and firm up completely before storing.
