食譜及做法:6吋中空模
蛋糕糊:
蛋黃 3隻
黑芝麻醬40g(無糖)
低筋粉 80g
清水70g
黑芝麻粉13g-15g
蛋黃加入少許糖拌勻(取蛋白霜的部份糖)
加入黑芝麻醬、粉拌勻
加入低筋粉
根據糊的濃稠度
慢慢加入清水
徹底拌勻成 蛋糕糊
蛋白霜:
蛋白 3隻
檸檬汁少許
糖 60g
粟粉 10g
蛋白加入檸檬汁
打至起粗泡
糖分3次加入
蛋白打至挺立成 蛋白霜
加入粟粉拌勻
組合:
把部份蛋白霜1/3加入蛋糕糊中拌勻
再倒回蛋白霜中徹底拌匀
焗爐低層:
第一輪:
上下火180度,焗15分鐘
第二輪:
上火160度 下火150度,焗35分鐘
第三輪:
上火180度,焗5分鐘(烤面)
取出倒轉
徹底放涼後脱模
Recipe and method:
Cake Batter:
3 egg yolks
Black sesame paste 40g (sugar-free)
Cake flour 80g
70g water
Black sesame powder 13g-15g
Add a little sugar to the egg yolk and mix well (take part of the sugar from the meringue)
Add black sesame paste and powder and mix well
Add cake flour
According to the consistency of the paste
Slowly add water
Mix thoroughly into cake batter
Meringue:
Egg white 3 pieces
A little lemon juice
Sugar 60g
Corn starch 10g
Add lemon juice to egg whites
Beat until coarse bubbles appear
Add sugar 3 times
Beat egg whites until they become meringue
Add cornstarch and mix well
combination:
Add 1/3 of the meringue into the cake batter and mix well.
Pour it back into the meringue and mix thoroughly.
Oven lower level:
Round 1:
Bake at 180 degrees for 15 minutes
Round 2:
Bake at 160 degrees for 35 minutes
Round 3:
Heat 180 degrees and bake for 5 minutes (baking noodles)
Take out and turn
After cooling completely, unmold
