Gemelli Pasta with Tomato Butter Sauce Recipe | Pasta with Cherry Tomato Butter Sauce & Parmesan Cheese
Ingredients:
8 ounces Gemelli Pasta (or any short pasta of your choice)
1 tablespoon salt (for pasta water)
4 tablespoon unsalted butter
4 garlic cloves, thinly sliced
1 small onion, finely diced
15 ounces cherry tomatoes, cut in half
1/2 cup fresh basil leaves, hand torn
1 teaspoon red pepper flakes
1/4 teaspoon salt (or to taste)
1/4 teaspoon black pepper (or to taste)
Parmesan Cheese, grated
Note: PLEASE RESERVE PASTA WATER FOR LATER USE. (To thin the sauce as much as required to avoid drying out.)
Directions:
1. Cook pasta according to the package direction, or until al dente. Add 1 tablespoon of salt.
2. In a large pan, sauté onion and garlic in butter over medium heat until soft and add tomatoes. Season tomatoes with 1/4 teaspoon of salt and 1/4 teaspoon black pepper or to taste.
3. Cook the sauce over medium heat and stir frequently or until tomatoes have burst and softened.
4. Add some of the pasta water to the sauce and stir to combine over medium heat.
5. Add pasta to the sauce and toss to coat.
6. Add fresh hand torn basil leaves and red pepper flakes and toss once more.
7. Serve and top with grated Parmesan cheese. Enjoy!❤️
