Simple Egg Kimbap (Seaweed Rice Rolls)

Are you curious about trying kimbap but feel overwhelmed by the preparation and ingredients? Don't worry, I have a simple recipe that uses common ingredients you may already have. However, you will need seaweed sheets (also known as gim or nori) and pickled daikon radish. Once you've got the basics down, feel free to try different protein options, fresh or cooked veggies, and homemade pickles. INGREDIENTS (2 rolls)
For the eggs:
4 eggs
½ tsp soy sauce
1 tsp mirin (rice wine, optional)
A light pinch of salt
For the carrots:
2 cups shredded carrots
1 tsp soy sauce
1 tsp sesame oil
A pinch of salt
For the spinach:
2 cups packed baby spinach leaves
1 tsp sesame oil
A pinch of salt
For the rice:
2 cups cooked rice
2 tsp sesame oil
½ tsp salt
For assembly:
Seaweed sheet
Danmuji (store-bought pickled radish)
Sesame oil for brushing
Sesame seeds for garnish
