Cinnamon, Cloves, Cardamom

Mustard Oil - 3 Tbsp
Bay Leaf - 2 Nos
Cumin Seeds - 1 Tsp
Onion - 3 Nos
Ground Masala
Salt - 1 Tsp
Tomato - 2 Nos
Cooked Jackfruit Water
Cooked Jackfruit Pieces

Method
Start by choosing a small, fresh raw jackfruit. Before cutting, grease your hands and knife with a little oil to avoid the sticky sap. Remove the thick skin and chop the tender part into bite-sized cubes.
Boil the chopped jackfruit in water with 1 tsp salt and ½ tsp turmeric for about 10 minutes until just tender. Drain and set aside.
Next, grind the masala. In a blender, add one large piece of ginger, 5 garlic cloves, 7 soaked Kashmiri red chillies, 1 tsp pepper, 1 tsp cumin, 2 tsp coriander seeds, a small piece of cinnamon, 4 cloves, and 2 cardamoms. Dry grind first, then add water to make a smooth paste.
In a wide pan, heat 2 tbsp mustard oil, add the boiled jackfruit, and sauté for 5 mins. Set aside.
In the same pan, heat 3 tbsp oil, add bay leaves, 1 tsp cumin, and 3 sliced onions. Sauté until golden, then add the ground masala and salt. Cook on low. Add 2 chopped tomatoes and let it soften.
Pour in the jackfruit water and let everything boil together. Finally, add the sautéed jackfruit, 1 more cup of water, and simmer for 10 mins.
Garnish with chopped coriander and serve hot with rice or chapati.
