Cheesy Koyla Karahi:

Ingredients

Chicken with bones 1 kg
Yogurt 4 tbsp
Tomatoes 4
Onion 1 sliced
Ginger garlic paste 2 tbsp
Water 1 cup
Clarified butter ¼ cup + ¼ cup
Green chilies 6
Lemon juice 2 tbsp
Cheese slices 4
Turmeric ½ tsp
Salt 1 ½ tsp
Roasted & crushed cumin 1 ½ tsp
Chili powder 2 tsp
Coriander leaves chopped ½ cup
Coal to smoke
Puck cheese 2 tbsp

Method

In a wok add blanched tomatoes, sliced onion, 1 cup water, ginger garlic, ¼ cup ghee, cover and cook for 10 mins till water dries, add salt, dry spices and fry masala well, add in the chicken with yogurt, cover and cook for 15 mins till chicken nearly done, add 2 green chilies cut in halves from center, add lemon juice, 2 tbsp coriander leaves, 2 slices of cheese, mix, cover and leave it on dum. Now give in dum of coal, remove, serve garnished in a karahi with 2 whole cheese slices, coriander leaves, green chilies sliced into julienne.



Cottage cheese and chana pulao:

Ingredients

Rice ½ kg
Oil ½ cup
Onion chopped 1 cup
Boiled chickpeas 1 cup
Ginger garlic 1 tbsp
Crushed fennel 1 tsp
Whole spices mixed 1 tbsp
Bay leaf 1
Yogurt ½ cup
Mace grinded ¼ tsp
Nutmeg grinded ¼ tsp
Allspice ½ tsp
Lemon juice 2 tbsp
Cottage cheese fried 200 gm
Raisins for garnishing
Method

Heat oil add chopped onion, fry till light golden, add in bay leaf, whole spices, ginger garlic paste, fry adding ¼ cup water, add in dry spices with yogurt, fry well, add boiled chana, mix and add water, cover and cook till boiling, when water boiling add soaked rice, mix, cover and leave it to cook till water dries. Lastly add allspice, lemon juice, grinded mace, nutmeg, leave it on dum covered, remove in a platter, serve garnished with fried cottage cheese cubes and fried raisins if you like.



Hari mirch kofta curry:

Ingredients for kofta

Beef mince ½ kg
Brown onion 4 tbsp
Cashew nuts grinded 2 tbsp
Allspice ¾ tsp
Ginger garlic 1 tbsp
Salt 1 tsp
Chili powder 1 tsp
Roasted & crushed cumin ½ tsp
Coriander leaves 2 tbsp
Bread slices soaked in milk 2
Egg beaten ½
Water 2 tbsp
Ingredients for stuffing
Green chilies 10-12
Fennel geound 1 tbsp
Crushed coriander 1 ½ tsp
Crushed cumin 1 ½ tsp
Salt ¼ tsp
Lemon juice 3 tbsp
Ingredients for gravy
Onion raw grinded 1
Ginger garlic 1 tbsp
Oil ½ cup
Yogurt ¾ cup
Turmeric ¼ tsp
Coriander powder 1 ½ tsp
Allspice ½ tsp
Chili powder 1 ½ tsp
Chopped coriander 2 tbsp
Salt 1 tsp



Method for kofta
Put all the ingredients for kofta in a chopper, grind to a smooth paste, grease your hands with oil, pick a stuffed chili in your hand and wrap mince over chili to form into a mirchi kofta, let the chili string hangout of kofta.
Method
Heat ½ cup oil, add grinded onion with ginger garlic paste, add dry spices, fry well, add yogurt, fry well, add stuffed mirchi, koftay, cook, do not stir with a spoon, use a pan to shake from time to time, add 1 cup water, remove, serve garnished with chopped coriander leaves.
Method for stuffing
Mix all together, form into a smooth paste, fill in pepper about 1 tsp in each.


Lemon drink:

Ingredients

Ispaghol 1 tsp
Lemon juice as required
Water, cold 1 cup)

Add lemon juice in 1 cup cold water with psyllium husk fiber
Stir vigorously
Drink quickly before it thickens
