Meal of the Month - August 2019 - Turkey Taco Wraps

This month I am bringing you a dish inspired by a good friend of mine that I know you are gonna LOVE! There is tons of flexability with this dish - you can use just about any protein and it still tastes awesome, we chose to go with turkey dices to make ours. You can also use any one of a number of things to "wrap" the dish for eating, soft corn or flour tortillas, Romaine, Butter or Iceberg lettuce, or who knows what else, just get creative and then let us know in the comments what you did! We are using Iceberg lettuce for ours and I can tell you they turned out fantastic.
This month I also used a different stove than my usual Firebox 5" G2 or Nano, I cooked this over the Soto WindMaster and it rocked! I really love this little gas stove - 2 minute boil time for over 2 cups of water in a standard Toaks Titanium pot (2000 mL) NOTHING special (unlike the MSR Windburner or the JetBoil Series)!!!
INGREDIENTS:
Main Dish -
2 1/4 C Water
Taco Seasoning Mix (1 Packet of store bought or use homemade recipe below)
1 C Turkey Dices (May substitue Beef, chicken, pork)
1/4 C Mixed Bell Pepper Pieces
1/2 C Corn
1/3 C Black Beans (Instant)
1/4 C Mushroom Pieces
1/4 C Sliced Onions
1/4 C Green Chile Pieces
1 Tbsp Green Onion Slices
Toppings -
1/2 C Sour Cream Powder (plus 1/4 C Water)
1/4 C Monterey Jack Shredds (Plus 1 Tbsp Water)
Wrap -
Lettuce (Romain, Butter, Iceberg)
Soft Tortilla (Corn or Flour)
Taco Seasoning -
1 Tbsp Red Chile Powder (Xtra Hot - but whatever you prefer)
1 Tsp Smoked Paprika
1 Tsp Cumin
1/2 Tsp Himalayan Pink Salt
1/2 Tsp Fresh Cracked Peppercorns
1/4 Tsp Cayenne Pepper
1/2 Tsp Oregano
DIRECTIONS:
Main Dish - Bring water to roiling boil, then stir in dry ingredients and taco seasoning being sure to fully coat everything. Return mix to a boil, reduce heat to simmer and allow to simmer for 12 to 15 minutes or until beans are soft and everything else is tender, stir often to prevent scorching or sticking. While simmering main dish, prepare toppings and wraps for use.
Toppings - Add water to sour cream powder in baggie and massage together to form correct consistency. Add water to cheese shreds and shake to coat fully, repeat as needed until water is absorbed and cheese is soft.
Wraps - peal leafs of lettuce or lay out tortillas to fill
Once dish and toppings are ready, plate up, serve and enjoy!
