📌 Recipe #1 — Flaxseed Tortillas (makes 5)
Ingredients:
1 cup flax seeds (≈ 150–160 g) — grind to a fine flour
1 cup boiling water (250 ml)
pinch of salt (optional)
🥑 Macronutrients per 1 tortilla:
160 kcal · 5.5 g protein · 12.6 g fat · 0.6 g net carbs · 8.1 g fiber
👩🍳 Method:
Grind flax seeds to a fine meal (coffee grinder works best). Tip into a bowl, add salt.
Pour in boiling water, stir well. Rest 10 min — the dough will thicken.
Divide into 4 balls; keep one on parchment, set the others aside. Cover with a second sheet of parchment and roll thin.
Cut a neat circle using a pot lid/plate; save trimmings (form a 5th tortilla later). Repeat for all.
💡 Texture tip: if a tortilla clings to parchment before frying, slide a silicone spatula around the edges to release cleanly.
Cook on a hot dry skillet (or lightly oiled) 1–1½ min per side over medium heat. Aim for a light, flexible crust — don’t let them burn.
Store covered up to 1 week in the fridge or freeze with parchment between tortillas.
📌 Recipe #2 — Cozy Breakfast Wrap (1 wrap)
Ingredients:
1 flax tortilla (from above)
1 egg
pinch of salt & black pepper
small bunch fresh herbs (parsley or chives), finely chopped
3 slices prosciutto (or ham/loin)
2 slices cheese (mozzarella/cheddar)
2 cherry tomatoes, thin rings
olive oil, a touch for the pan
basil (optional)

≈ 458 kcal · 27.3 g protein · 35.4 g fat · 2.9 g net carbs · 8.46 g fiber
👩🍳 Method:
Whisk egg with herbs, salt, pepper.
Sear prosciutto in a little olive oil; pour the egg over it.
Place the tortilla on top; cook ~2 min until the egg sets, then flip.
Add cheese and tomato rings; a little basil if you like.
Fold or cut in half and enjoy warm.
